Recipe: Keenan's Vegan Chocolate Peanut Butter Mousse Pie

Keenan in marketing/sales gifted us with this creation. Enjoy!

2 packages silken (soft) tofu
1/3 cup evaporated cane sugar (use a little less if you're using our 59% chocolates)
14 - 16 oz any dark Dagoba chocolate
1/8 cup maple syrup
2 tsp vanilla extract
3 Tbs hot water
1 cup peanut butter, room temperature
* Xocolatl or Chocolate Covered Dagoba Nibs

Favorite large pie crust shell, pre-baked

Melt chocolate in double boiler. Blend in 2 tsp vanilla extract. Keep warm. Place tofu in blender. Add 3 Tbs *hot* water and 1/8 cup maple syrup. Blend on medium-high, scraping down sides for even blending. Stop blender, add half of the melted chocolate and blend again on high. Add 1/3 cup sugar and the rest of the melted chocolate. Blend thoroughly. Taste, add more sweetener if needed. Set aside. Spread peanut butter onto bottom and sides of pie crust, gently so it doesn’t tear the crust. Pour in tofu-chocolate mixture and spread to even. Sprinkle with chocolate covered Dagoba nibs and anything else you fancy. Chill in refrigerator overnight, and eat!

Dear Dagobians,

As the snow falls and the the year comes to a close, we are reminded of the many gifts we have encountered this year. This reflection is such a gift in itself because it brings a deep sense of gratitude and the reminder to give back. "As you give, you will receive" - this we know is true.

We have been blessed with the wonder of cacao, the exquisite pleasure of artisan chocolate, the beauty of nature, support from our customers and the friendship of cacao producers, colleagues and fellow employees.

Honoring that, we can do no less than return these by planting new seeds of joy, hope and partnership. At Dagoba, that means sharing the rewards and always seeking to operate and live more sustainably.

This year, we supported over 100 non-profit groups through our donation program, co-funded ecological research in Costa Rica and worked hard to expand the market for our products, thus sharing the sweet rewards of sustainability with cacao communities, our own neighbors and the environment on a wider scale.

At the same time, we've initiated a Full Circle Sustainability Committee to make our operations more ecologically and socially responsible, expand our community programs and take our quality to a new dimension. This inspires new ways of living, taking our mission full circle.
